Current “mainstream” theory suggests that quarks are fundamental (like electrons). They aren’t made out of anything.

There are other theories like strong theory that suggest that there is an even more fundamental building block of matter (strings), but although there is a lot of research and theory, current experimental methods are not able to provide any evidence to support string theory. String theory is perhaps the best known and most studied theory but it isn’t the only theory proposing more fundamental building blocks of the universe.
