If they’re closely related enough to be able to breed, it is possible.

But many birds have species-specific mating displays to attract mates, so they might ve able to buy not want to.

What do you mean? You can absolutely have, e.g., mixed breed chickens, but you can’t breed, say, a bluejay with a cardinal, because they’re different species.

Mixed *breed* sure, in domesticated birds with notable breed differences like chickens and fancy pigeons.

If you mean true cross-species hybrids, the answer is usually no. There are a few examples of closely related species of gulls or parrots that can hybridize, but otherwise the genetic barriers to reproduction are the same in birds as they are anywhere else. You cant breed up a Turducken.
