Dabbing grease off food

When you use a napkin or paper towel to absorb grease off of food, does that absorb any of the fat grabs? Watching my fats very closely and not sure if soaking up the grease makes a difference? I know it’s “healthier” to not eat the additional grease, but does it make a difference in terms of macro’s/cals?

Yes it does. Say you have one slice of pizza. Place it on a plate and put that on a food scale. Write down the number of grams total. Blot off the oil and weigh it again. The number of grams you lost you can subtract from your fat grams and therefore you can subtract the calories accordingly. (Fat has 9 calories per gram).
