does sugar modify coffee’s taste besides bitterness?

It makes it sweet, and I personally find it increases the flavor of the cream if cream is added, and brings out the acidity if no cream is added. I don’t put sugar in my coffee, and stay away from it generally. When I go through the drive thru at Tim’s I can always tell when they have stirred my coffee without rinsing the spoon off from the order before if that order had sugar.
