Does toasting bread remove any nutricions it may contain?

Tldr no if you don’t burn it.

By nutrients I assume you mean the sugar and protein. When you toast/cook anything with sugar and protein in it, it undergoes a “maillard reaction”, this is the brown crust you see on the bread. You could say that the “nutrients” are “changed”, and yes some of the chemicals that come from this process have been known to cause cancer. But you shouldn’t waste your time worrying about getting cancer from toasted bread, life is too short.

The only way youll “remove the nutrients” is if you burn the bread.
