UHT milk is cooked at high temperature to denature the proteins that form bacteria and their endospores, the organisms that would cause the milk to spoil. The remains of the endospores would still be present, but if you still consider them an endospore is sort of a point of view. Is a car crushed into a cube of scrap metal still a car?
