If sunrise is at east and sunset at west, why is it more sunny at south than north throughout the day?

While it’s true that the sun rises at the east and sets at the west, the reality is a bit more complicated than that. The “path” the sun travels through the sky varies depending of the day of the year. If you’re outside the tropics, the sun never will be truly above your head, it will always be towards the Equator.
