One of the best records of past climates are ice cores, cylinders cut out of the polar ice caps. Every year different amounts and composition of water freezes at the polls and those leave a recognizable trace in the ice. Cut a vertical core out and as you go down the core, you see what the climate was in the past.
Near term you can use tree rings for similar results, long term geological stratification.
