An S trap is a water pipe that goes down from the drain, curves up, then curves down, exiting out through the floor. The pipe makes a sideways S shape: down, up, down.

A P trap is a water pipe that goes down from the drain, curves up, and then curves to the side, exiting horizontally out through the wall. The pipe makes a sideways P shape: curve down and up, and then to the side.

What both have in common is the first curve that changes in direction from down to up. Particles heavier than water get trapped in this curve. And bad smells from the sewer beyond the drain are blocked by the water that collects at this point.
