eli5: Do people really fall instantly like in movies, after getting shot? If so, why?

Sometimes. And sometimes they keep going as if not wounded at all even though they will be dead in a few seconds.
I will say rifle rounds tend to drop them pretty quick. Tends to have a large exit wound
