eli5: Do people really fall instantly like in movies, after getting shot? If so, why?

Sometimes yes, if they are hit in vital areas that make walking all but impossible– heart, lungs, spine, brain of course, anything that is immediately critical for moving around.
But also, maybe not. Someone hopped up on adrenaline and/or other drugs and trying to survive a gunfight may tank several shots and succumb a little bit later from blood loss. Famously, James Doohan (Scotty in Star Trek) was shot several times in the D-Day invasion and lived.
But the way bad guys in movies get hit once, go “augh!” and die instantly is probably not very likely.
