yes macos saves files differently.

neither of them gets (meaningfully) slower from saving files

The main reason is that the OS a Mac uses is specifically designed and optimized for that exact hardware while Windows has to accommodate thousands or perhaps millions of hardware combinations. Each Windows PC might have a different CPU, GPU, Motherboard, sound cart, network adapter and so on.

In addition to below, Apple puts a lot of effort into optimizing the feel of performance, even if it isn’t any faster than a Windows machine. Slight delays in the UI make the machine feel slower, eliminate those, it feels faster.

On an M1 Mac, the OS is filling the low-power cores with all the low-priority tasks, leaving the high-power cores to instantly respond to any sudden need for more performance.
