eli5 : how come when you thaw out meat you’re not supposed to re-thaw it?

I’m not sure if this is true or not but it’s something I’ve heard when I was younger so I’ve just always taken it as a rule.
Is there a reason why you’re not supposed to re-freeze meat once it’s been thawed out?

It’s strictly a texture/quality issue. It’s not a food-safe issue. Companies that produce frozen foods warn you not to re-freeze thawed portions because it makes them look bad when someone eats something they made that has been thawed and refrozen one or twice and is now mushy and gross. And you know the consumer isn’t going to believe you when you say it’s because the food was mishandled. They’re going to say it’s because your food is bad, they’re never going to buy it again, and they’re going to tell anyone who will listen not to buy it, either.

When you see things on packages like, “Refrigerate after opening”, *that* is a food safety guideline. “Do not re-freeze if thawed,” is strictly to help ensure that the food you’re eating meets minimum quality standards.
