how do bookstores or online book stores manage to keep their books from staining and yellowing when the books sitting on my shelf turn yellow after several months?

Books turns yellow under sunlight. Bookstores and online shops keep their stock in rooms without natural light and wrapped in packaging.

They are sold, therefore constantly being replaced.
Libraries replace books as well. At each return a librarian inspects it.

Bookstores and libraries keep very specific light and humidity conditions in their establishments to prevent exactly that. They never let sunlight hit the books directly, as someone else commented, and they usually control the type and amount of artificial light they use, same with air humidity and temperature. Some are even kept in deposits with barely any light, that’s how you keep books for hundreds of years!
