How can someone just hide away in an embassy while in another country and be untouchable?

It is a well established diplomatic doctrine/courtesy. When a country is invited or permitted to establish an embassy in another, the host country generally treats the foreign embassy ground as “equivalent” to the lands of the foreign country. In general, no one person is worth violating this doctrine.
