ELI5- How do scanners on Office grade Printers work?

I’m assuming you mean the actual part that does the scanning and not feeding the documents to get scanned?

If so, it’s basically the same way a consumer scanner works. It has a scan head (light + camera) that takes a lot of pictures of the document and stitches them together to make a copy of the document.
