Eli5 how do some headphones know the dB to the sound your listening to?

My sony headphones can tell me how loud my music is playing at and I’m wondering how they manage to do that and how accurate it really is. Explanations are appreciated.

They probably can’t. If they’re USB or bluetooth powered(meaning there’s a microcontroller in them), and use a dedicated driver on the source, it’s possible. Then they’d probably be preloaded with a table made in the R&D labs which says that 30% volume=x dB etc. It won’t be very accurate though.
