A portion of humans do have different types of color blindness, some more significant https://en.wikipedia.org/wiki/Color_blindness

We can compare baselines using color palates or objects as reference. https://www.aoa.org/healthy-eyes/eye-and-vision-conditions/color-vision-deficiency?sso=y

Excluding people with color blindness and hyperchromatic vision, about whom we know that they see colors differently, there is no way to know that another person actually perceives the same colors in absolutely the same way as you. You can’t get into their head and see their view for yourself. And you and them might just be using the same word for, say, red color to describe different perceptions of the same actual color.

We don’t. I’m red-green colorblind, so I know for a fact I see the world very differently than a lot of people do.
