All coffee works by dissolving bits of coffee bean into water when either infused together (French press) or the water is passed through the coffee (drip coffee, espresso, and moka pots)

A moka pot is a clever way of getting the water to pass through the coffee.

Boiling the water in the lower chamber creates steam, this steam wants to expand out of the chamber, so it starts pushing the rest of the still liquid water up a tube.

When it goes up the tube, it comes into contact with ground coffee, and it dissolves all the coffee bits just like regular. But the steam keeps pushing the water up, and up, and up, past the filter, and up another tube into the top chamber, where you have the finished coffee.
