Every time I see car detailing videos I always see the people get the electronics wet with soap and I assume water? Or there is some spray. How does that work? Is there a reason the dashboard and car screen work fine after a detail?

A proper detail cleans the carpet and fabric of the interior as well as a wash and wax of the exterior. If you choose a cut and polish they will work out any light scratches in the clear coat with a buff pad.
If you own a vacuum and an OZ of intention then you should wash, wax and vacuum your own car for free and avoid this all together but most people seem to avoid physical labor like the plague
