Every time I see car detailing videos I always see the people get the electronics wet with soap and I assume water? Or there is some spray. How does that work? Is there a reason the dashboard and car screen work fine after a detail?

Not that I’d recommend it, but pretty much any electronics will be fine getting wet as long as there’s no power going to it, and its fully dry before applying any power.
