The candy has small bubbles of gas inside them. The gas is under pressure. When you eat them, your saliva “melts” away the surface of the candy, making it thinner and eventually making a hole on the bubble. Now, the gas that was under the pressure can escape the candy and propels the candy in the opposite direction, like how a balloon is propelled when it’s nozzle is untied – gas from inside is going one way, and the balloon is going into the opposite direction. The candy I’m talking about are the little sparkles, which can sometimes be eaten by themselves, or in be mixed into another candy or even chocolate bar.
