Plants respirate oxygen but how much does this actually produce? Does having one or two potted houseplants in a small apartment noticeably increase the oxygen concentration in the air?

All of it.† Maybe I don’t understand the question, but all the free O2 in the Earth’s atmosphere is produced by plants (if you use a very general definition that includes algae in the oceans). O2 is a very chemically active gas, and it reacts pretty quickly.
† This is something of an exaggeration, made to make a point more ELI5.
