eli5 How old prison door locks work

I have been trying to find a detailed explanation on how old prison door locks work, the ones with bars. y’know when a guard pulls the lever and every cell opens? how does it work? #eli5

The ones I saw were basically a bolt that dropped into the top of the door. That keeps the door shut. When the lever is pulled, it pushes a bar up, which lifts another bar which lifts the bolt. You could imagine the same system with ropes and pulleys, and I assume for bigger systems that is what is at work behind the scenes.
