eli5 how/why taste pallet change over the years?

What causes our taste pallet to change when you grow old? The foods that sucked during my childhood has become my go to meals.

I was told that your tastebuds “rearrange” themselves every 7 years or so, which can change what you like or dislike. I used to HATE fish with a passion, but a couple years ago started enjoying salmon and some sushi.
