Everytime you breathe you exhale moisture in your breath. If you breathe through your mouth you exhale much more moisture than if you breathe through your nose. Depending on multiple factors you might breathe through your mouth more when you’re sleeping and so lose a lot of water. When you wake up you’re thirsty because you’ve lost so much water.
