ELI5. If plants don’t have muscles, how do they move? How do they open their leaves and turn their stems so that their flowers face the light?

They use water.

A plant will pump more water in to structures on one side and remove water from the opposite side. This will cause the plant to lean in the direction the water was removed.

When leaves emerge from the bud they are small and crumpled. The plant fills them with water to expand them.
