How are there still new corridors and things being discovered in the pyramids. I’ve always assumed that we have the sonar/radar and remote control tech to see through or find the gaps but there are still new corridors and chambers being discovered.

The most recently discovered chamber does not appear to have an entrance of any kind, making it impossible to have been found by searching around for new doors or corridors which led to it.
Instead, it appears to be an empty space in the pyramid to make the stones above another chamber or corridor lighter, such as when a toy or sculpture is hollow.
As others have mentioned, it is hard to detect empty spaces through so much solid stone. It is also hard to use other techniques, such as measuring the density of a piece of metal, such as a bar of solid gold, to make sure nothing is missing from the inside of it.
