How are there still new corridors and things being discovered in the pyramids. I’ve always assumed that we have the sonar/radar and remote control tech to see through or find the gaps but there are still new corridors and chambers being discovered.

It’s harder than you might expect to get a signal through that much solid rock. The technology to do so is pretty new.
Since these are also millenia-old cultural artifacts of immense historical significance there’s a lot of Egyptian Government red tape and archeological care that must be taken when working on them. You can’t just take a pickaxe to them looking for shafts and tombs, all tests must be carefully monitored and non-destructive.
