How do sleep trackers (like Apple Watch) determine what stage of sleep you’re in? I’ve watched scientific videos where they are almost as accurate as EKG/EEG monitoring.

I don’t think any of the wearables (Apple Watch, oura ring, whoop) are very accurate. Some are worse than others, but the data is hardly meaningful for anything.

They use a combination of movement and heart rate data (hr can also extrapolate to respiratory rate through heart rate variability). They would also have an idea about the sleep cycle and try to map the data to a phase of sleep.

Out of all the biometric data, there isn’t a whole lot to be gleaned from sleep data for most people. Just get good sleep and maintain good sleep hygiene and that’s about it.
