How do the sports announcers know exactly who’s in the play and announce it instantly, they can probably announce the home team instantly but what about the team they’re playing? Do they just memorize or is there software to tell them who’s playing when? This is mostly aimed at hockey because players are on and off so quickly

It is their job to do so. So they study up on the main players on both teams. They also have cheat sheets to go off. And they also get things wrong quite a bit. Most of the time though an announcer for a particular sport is going to be a fan of that sport and will want to know as much as possible about all the teams.
Edit: Hockey only has 23 active players per team so it is not a lot to get a handle on.
