Staples are fast, but leave more visible marks. Stitches are slow, but can be done in a way that leaves little to no marks. Patience is a rare quality among surgeons.
Much easier and quicker to use and remove staples than sutures (stitches), though sutures are preferred for smaller wounds or incisions.
I think it’s case by case. If you have a very large open wound or incision and need it closed asap, staples. Otherwise, stitches.
