The ease of cutting something depends on two things: the strength of the thing you’re cutting, and the sharpness of the thing you’re using to cut.

A piece of paper, for example, is very difficult to cut with a plastic knife. Metal scissors, however, can cut right through it.

For things that are very hard to cut, like stones, metals, wood, etc., they’re composed of molecules that are bound very tightly together, meaning it requires much more energy and precision in order to break them apart. Things like paper, mud or water have very loose molecules comparatively, and so they can be split with less energy and more dull instruments.
