If a person gains weight What Causes that fat to go to organs, why can’t it just go to the tummy or some other place where it would make sense for it to go. And why does sugar in diet make more fat go to for example the heart?

Fat doesn’t, directly, build up in the heart specifically.

But high levels of certain fats and other chemicals in your bloodstream causes them to deposit on the inside of your blood vessels, kind of like a coating on the inside of a pipe. And as that coating gets thicker, it restricts the movement of blood. That can cause clots to form or allow chunks of that coating to break off and block vessels, and it’s those blockages – usually in the blood vessels that supply the heart with oxygen – that are why obesity is related to heart attacks.
