eli5: What does it mean when a CEO/CFO says “we are trading at 5x”?

As a financial consultant i would say nothing because it depends on watever goalposts they chose at that exact moment. Regarding stocks don’t believe people who gain from you believing them. They a. all have a conflict of interest and b. Mostly do not give a shit about you.
