It’s irritation of the wall back there, either from germs directly on the wall or up in your nose causing you to make more mucous which slowly drips down the back of your throat. That irritation is also part of what encourages you to “clear your throat”, which is helping your body move mucous as part of your immune system fighting whatever irritant is causing you problems (either by spitting it out or swallowing it to an acidic stomach).
