On motorbikes you have two wheels and two brakes. ABS is a control system designed to avoid locking up the wheels while braking, and to do that it needs to know how fast the wheels are spinning and it also needs to be able to reduce the brake fluid pressure when a wheel locks up. You need those two (sensor and actor) for each wheel you want to control individually.

ABS with single channel only control one brake (generally the front one). The front brake is the one typically doing most of the job and also is the one which is more dangerous when locking up. A locked-up rear-wheel, which can happen with this ABS, is however still undesirable and risky.

Dual channel ABS controls both brakes individually, preventing both wheels from locking up, so one can make the most of both brakes in an emergency stop while the bike remains manageable.
