Food poisoning can be caused by eating food contaminated by a few things, such as bacteria, toxins produced by bacteria that used to be there, viruses, etc.
When you eat the tainted food, your body goes “oh jeez these aren’t good I gotta get rid of them from my digestive system before they infect me.”
Then you essentially try to purge everything out of your digestive system as quickly as possible from both ends, which is very unpleasant but the best strategy for avoiding infection and ensuring survival.
