eli5: what makes certain materials (glass, metals, etc.) oven safe / able to be used in high temperatures?

Depends on how high the heat source is. I would suggest testing on various materials with different termites and/or chemical reactions. Safely-ish, of course.

I think the answer to your question is that that some things are coated with materials that will harm you when you cook on them at a high temperature and eat and/or inhale it. Others will simply melt (expelling fumes you want nothing to do with) or break.

It is chemistry and physics.

They don’t melt or break down at temperatures low enough for your oven to get to. A cast iron pan with a melting point of 2200F isn’t going to even noticed being in your oven even if you crank it up to max.

The atomic bonds of baking glass (different from window glass) and metal (not all metal) do not break down from heat until incredibly high temperatures are reached

Thw fact that they dont react with anything else.

Some chemical reactions need a high temperature to start, so its important that these materials are inert or non reactive even at high temperatures.
