eli5: what makes certain materials (glass, metals, etc.) oven safe / able to be used in high temperatures?

They don’t melt or break down at temperatures low enough for your oven to get to. A cast iron pan with a melting point of 2200F isn’t going to even noticed being in your oven even if you crank it up to max.
