Eli5 what’s the difference between convection cooking in an oven and an air fryer?

Aren’t both methods just moving around hot air with a fan ?

conceptually the do the same thing as a convection oven, but in practice air friers are faster because they blow more air directly to the food (rather than sideways in a convection oven) and have a smaller volume that heats up quicker

Also the form factor changes, while an oven has a front door, air friers have a slide out tray that makes it easier and more convenient to load and take things out to serve them

The difference is in how the heat is transferred to food.

In a traditional oven, the air in contact with the food cools very quickly. This happens because the heat is transferred to the food and also because the surface of the food contains traces of water. Water keeps the temperature at 100 C° until it evaporates completely.

In a air fryer, the fan replaces the cool air with hot air. It also replaces wet air with dry air. This makes the surface of the food crispy like in a fryer

Air fryers are small and they can heat up food very quickly, which gets them the nickname “fryer” since it gives the food a texture/appearance similar to frying. On most regular ovens, even with the convection setting you won’t get that result, because they’re too big and their convection function is not strong enough, but if it is, then they have the air fryer functionality.

Not sure how to ELI5 on this one, but a counter top air-fryer only unit is just really good at it’s job. It’s a lot more efficient and the air is being blowing faster and circulating better because that’s what it’s designed to do. Food also sits in a baskets so air flow goes all around. In a connection oven usually your food is sitting in a pan with a lip so only the top is having air move over it.
