Eli5 what’s the difference between convection cooking in an oven and an air fryer?

Aren’t both methods just moving around hot air with a fan ?

Yes they do the same thing, and in fact there are many ovens offering air fryer functionality.

The key difference is the speed and intensity. Air fryers are small and they can heat up food very quickly, which gets them the nickname “fryer” since it gives the food a texture/appearance similar to frying. On most regular ovens, even with the convection setting you won’t get that result, because they’re too big and their convection function is not strong enough, but if it is, then they have the air fryer functionality.
