You squeeze olives and get oil but if you squeeze an orange you get juice.
What sets oil and juice apart? Why can’t you get olive juice and orange oil?

Juice is composed of water and of everything that dissolves well in water. Oil is composed of fat and of everything that dissolves well in fat.

Because water and oil don’t dissolve into each other, they are well separated.

Both olive oil and olive juice exist, they are produced simultaneously. Olive juice is less popular.

In general, all fruits have oil and juice, but they have more of one than the other depending on whether they are fatty or contain mostly water.
