Nothing really. Seed oils have relatively high amounts of omega-6 fatty acids which can promote inflammation, but we do need some omega-6 in our diets so the proper approach is just “don’t eat too much”. They aren’t bad in general.
However the internet is full of people who listen to Joe Rogan and he relatively recently had a guest on who was very much against seed oils, so suddenly there are a huge number of suggestible people who are against seed oils. That is the deal.
It depends on what seed you mean.
Olive and avocado oils are great nutritionally and are utilitarian.
Other seeds like linseed, cottonseed or rapeseed have various detractors due to thinks like rate of oxidation (going rancid), processing necessary to remove toxic compounds or how it affects digestion/gut health…
