Dems dere is nucleation points. It’s a spot of uneven surface or some bitty bits at the bottom of your pot that the water jumps off to start boiling.
Eli5: when the water is in a state of rolling boil, why do the bubbles appear to ascend from particular pinholes in the bottom.
