eli5 – where are the fish organs when filleting a fish

I’ve seen a ton of videos of people filleting a fish but I never see the heart/stomach etc. are the organs removed before filleting them or am I just going insane

If you caught the fish, you had to gut the fish yourself and the offal is in your trashcan. If you buy a whole fish from the store, the fishmonger removes the guts (and possibly the head) for you.
