eli5 – where are the fish organs when filleting a fish

I’ve seen a ton of videos of people filleting a fish but I never see the heart/stomach etc. are the organs removed before filleting them or am I just going insane

As I understand it, the organs are removed when the fish is gutted, a separate step that occurs *before* it is fileted.
