eli5 – where are the fish organs when filleting a fish

I’ve seen a ton of videos of people filleting a fish but I never see the heart/stomach etc. are the organs removed before filleting them or am I just going insane

If you buy fish from a market, they usually take out organs for you. It’s always better to remove them before filleting.
