eli5 – where are the fish organs when filleting a fish

I’ve seen a ton of videos of people filleting a fish but I never see the heart/stomach etc. are the organs removed before filleting them or am I just going insane

When you fillet you kind of miss the organs due to you not breaking through the rib cage( if you’re doing it right). So no, you wouldn’t see organs.
