eli5 … where did the protein in hummus/roasted chick pea snacks go?

300 viewsChemistryOther

How come chick peas have a ton of protein but when you see the protein amounts on things like roasted chick pea snacks and hummus there’s about 1 or 2 grams of protein? is it because it’s just processed so much or what? what about the baked ones? how did they lose protein?

It doesn’t go anywhere. 100 g of chickpeas has 7.7 g of protein. 100 g of hummus (chickpeas blended with olive oil, lemon juice, sesame seeds, and garlic) has 6.7 g of protein.

Chick peas actually don’t have a ton of protein. Compared to vegetables or legumes maybe but really negóciale when compared to meat or dairy products
